Soak potatoes for 1-2 hours (or overnight if possible) to help remove the starch. This makes the potatoes light and fluffy when cooked!
Preheat oven at 400. Chop potatoes into halves or quarters, depending on size. You want them little larger then bite-sized here. Slice sausage into the same size - you can use kielbasa (our prefernce), chicken sausages, or Italian! Course chop onions and mince fresh garlic. Toss all ingresients in a large bowl with olive oil, 1 tbs of fresh lemon juice, and coat generously with Za'atar.
Coat a deep baking sheet with non-stick spray and place mixture evently.
Roast for 45 minutes or until potatoes are fork-tender and sausages are fully cooked (you may cover wth foil if the sausages get crispy too quickly). We like a quick BROIL on HIGH to get a nice char on the top before serving. Serve with fresh lemon wedges & a side salad.
